NASI KERABU

Antara banyak-banyak resepi nasi, resepi nasi kerabu adalah resepi nasi yang paling renyah dan memakan masak yang lama untuk dibuat. Walaupun renyah dan banyak ‘step’ ,masih berbaloi untuk kita buat sendiri nasi kerabu ini kerana dijamin sedap dan boleh diubahsuai mengikut selera tekak kita sendiri. Memang puas hati jika dapat makan nasi kerabu hasil air tangan sendiri.

 

Resepi nasi kerabu adalah satu-satunya resepi nasi yang perlu ada tiga jenis sambal iaitu sambal tumis nasi kerabu, sambal kelapa dan sambal lada/ sambal air lada. Walaupun tanpa sebarang lauk, nasi kerabu masih sedap dimakan begitu sahaja kerana kombinasi ketiga-tiga jenis sambal ini bersama dengan ulam-ulaman dan budu yang dimasak.

 

A] RESEPI SAMBAL TUMIS Nasi Kerabu
BAHAN-BAHAN 
-1 bawang merah (dikisar)
-3 ulas bawang putih (dikisar)
-2 inci halia (dikisar)
-2 serai (dikisar)
-1 serai (diketuk)
-3 sb cili kisar
-secubit serbuk kunyit
-1/3 blok gula melaka
-1 santan kotak
-2 kotak air (guna kotak santan)
-1 asam keping
-garam

CARA MASAK Sambal Tumis Nasi Kerabu
1.Panaskan minyak & tumiskan kesemua bahan kisar
2.Kemudian masukkan 3 sb cili kisar, serbuk kunyit & serai yang telah diketuk
3.Masukkan gula melaka, kacau sebati
3.Tumis hingga pecah minyak
4.Masukkan santan
5.Masukkan air
6.Masukkan asam keping
7.Masukkan garam

B] RESEPI SAMBAL KELAPA Nasi Kerabu
BAHAN-BAHAN 
-1 sb lada hitam (dikisar)
-1/4 blok gula melaka
-1 bawang merah (dikisar)
-3 ulas bawang putih (dikisar)
-2 inci halia (dikisar)
-2 serai (dikisar)
-2 ekor ikan kembung (rebus bersama garam + 5 asam keping)
-1 biji kelapa parut
-2 sb gula
-garam

CARA MASAK Sambal Kelapa Nasi Kerabu
1.Sangai @ goreng tanpa minyak kelapa parut dengan api perlahan hingga keperangan
2.Biarkan kelapa sejuk baru dikisar kering
3.Asingkan isi ikan dari tulangnya (ikan yang telah direbus)
4.Tumbuk kesemua isi ikan
5.Masukkan dalam kuali kelapa yang telah dikisar & goreng bersama bahan kisar + isi ikan tumbuk
6.Masukkan gula & garam
7.Kacau sebati & tutup api, jangan sampai kelapa terlalu kering…biarkan sambal kelapa sedikit lembap baru sedap

C] RESEPI Nasi Kerabu
-4 pot nasi
-2 serai (diketuk)
-11 daun limau purut
-1 genggam bunga telang direndam dalam air suam seketika

CARA MASAK Nasi Kerabu
1.Basuh beras
2.Masukkan serai & carik-carikkan daun limau purut
3.Tapiskan air bunga telang & kacau sebati
4.Sukat air hingga ruas pertama jari (jika tak cukup tambah air, jika lebih buang air)
5.Masak dalam rice cooker

-1 cili merah
-7 cili padi merah
-1 sb gula
-garam
-air
-cuka

-tauge

Nasi kerabu is a Malaysian cuisine rice dish, a type of nasi ulam, in which blue-colored rice is eaten with 3 types of sambal…sambal tumis (sweet salty sambal), sambal kelapa (coconut fish flakes) and sambal lada (chili sambal). Other things that is a must in nasi kerabu are ulam-ulaman and fish sauce or we called it budu. Other side dish to complement this blue pea rice is varied like battered fish or fried chicken, grilled beef, salty egg and crackers. The blue color of the rice comes from the petals of butterfly-pea flowers (bunga telang), which are used as a natural food coloring in cooking it. The rice can also be cooked with plain white rice or rice cooked using turmeric. It is often eaten with solok lada and is also eaten with fried keropok.

Nasi kerabu is very popular in the east coast states of Peninsular Malaysia such as Kelantan and Terengganu, and now can be found throughout Malaysia as well as in southern Thailand, where it is known as khao yam.

A] SWEET SALTY SAMBAL Blue Pea Rice @ Herb Rice
INGREDIENTS SWEET SALTY SAMBAL Blue Pea Rice @ Herb Rice
-1 red onion (blend)
-3 cloves garlic (blend)
-2 inch ginger (blend)
-2 lemongrass (blend)
-1 lemongrass (smashed)
-3 tbsp chili paste
-a pinch of turmeric powder
-1/3 block palm sugar
-1 box coconut milk
-2 box water (measure with coconut milk box)
-1 tamarind slice
-salt

HOW TO COOK Sweet Salty Sambal Blue Pea Rice @ Herb Rice
1.Heat the cooking oil & saute blended ingredients
2.Add 3 tbsp chili paste, turmeric powder & lemongrass (smashed)
3.Add palm sugar & mix well
3.Saute until oil separates
4.Add coconut milk
5.Add water
6.Add tamarind slice
7.Add salt

B] COCONUT FISH FLAKES Blue Pea Rice @ Herb Rice
INGREDIENTS COCONUT FISH FLAKES Blue Pea Rice @ Herb Rice
-1 tbsp black pepper (blend)
-1/4 block palm sugar (blend)
-1 red onion (blend)
-3 cloves garlic (blend)
-2 inch ginger (blend)
-2 lemongrass (blend)
-2 cooked mackerel (cook with salt + 5 tamarind slices)
-1 whole grated coconut
-2 tbsp sugar
-salt

HOW TO COOK COCONUT FISH FLAKES Blue Pea Rice @ Herb Rice
1.Fry grated coconut wihout oil until light golden brown
2.Let it cool & then dry grind
3.Pull apart flesh fish from the bones
4.Pound flesh fish
5.In the wok, fry desiccanated coconut with blended ingredients and pounded flesh fish
6.Add sugar & salt
7.Mix well
8.Turn off heat

BLUE PEA RICE @ HERB RICE
-4 cups rice
-2 lemongrass (smashed)
-11 kaffir lime leaves
-1 handful of butterfly pea flowers

HOW TO COOK BLUE PEA RICE @ HERB RICE
1.Wash & drain rice
2.Add lemongrass & kaffir lime leaves
3.Drain blue pea water
4.Measure water up to 1st knuckle
5.Cook rice cooker

D] CHILI SAMBAL Blue Pea Rice @ Herb Rice
-1 red chili
-7 red bird’s eye chilies
-1 tbsp sugar
-salt
-water
-vinegar

HOW TO COOK  CHILI SAMBAL…just blend all the ingredients & it’s done!

E] SALAD Blue Pea Rice @ Herb Rice
-beansprouts
-long beans
-cucumber
-cabbage
-kantan flower

F] FISH SAUCE Blue Pea Rice @ Herb Rice
-Cook fish sauce with lemongrass & kaffir lime leaves (low heat)…stir for a while and it’s done!
